Yummy Recipe

In my efforts to begin living a healthier lifestyle, I plan to share yummy/healthy recipes and encourage people to share theirs with me!

I found this first recipe in Health magazine for the month of September under the heading "The BEST Fat-Burning Breakfasts." I'm guilty of eating little to no breakfast, so I'm trying to make an effort to eat something that will kickstart my day. The following is a recipe for Blueberry Oat Pancakes with Maple Yogurt. The resistant starches in the oats (also found in high amounts in bananas) signal the body to use fat for energy, so they are recommended to get off on the right foot for the day!!!

You'll need:

1 cup oats
1/2 cup low fat cottage cheese
2 large eggs
1 teaspoon vanilla extract
1 cup blueberries

In a food processor, blend all of the above ingredients except for the blueberries. Once blended, gently stir in the blueberries. Spoon about 2 tablespoons of the batter into a skillet at medium heat and cook for about 3 minutes each side. The recipe ends up making about 5.

They also suggest combining 1/4 cup low fat Greek yogurt with 1 tablespoon of maple syrup to put on top, but I omitted that.

I put some cinnamon in the pancake batter and I think that added an extra kick. They tasted really good with fresh blueberries. Now that I have this recipe as a base, I'm going to experiment with using different fruits.

Nutritional facts:

Serving size is 3 of the pancakes - Calories 410, Fat 12g - this was WITH the maple topping.

Anywho, I thought this would be a good way to kick off my blog. Hopefully I can use this to record my journey in both adopting a healthier diet more consistently and starting to exercise!
